A barbecue trip needs a cooler that keeps food cold, not merely a closed bag. Plan transport, arrival and cooking before marinating, and take quantities within cooling capacity. Sun and car heat can affect even a short trip without proper protection.
Packing the cooler
Chill meat thoroughly and use leakproof containers below ready-to-eat foods. Add enough ice packs or ice to maintain 4°C or below. An internal thermometer removes guesswork.
Use a separate drinks cooler if possible, avoiding repeated opening around meat. Keep frequently requested items elsewhere and place the meat cooler in shade, away from hot vehicle surfaces and direct sun.
On arrival
Keep packs chilled until the grill is ready, then remove one manageable batch. Prepare clean cooked-food plates, separate raw utensils, and soap and water or suitable cleaning arrangements for hands and tools.
If vegetables cannot be washed safely on site, prepare and store them correctly at home. Keep bread and salad away from or above raw packs, and temperature-sensitive sauces in small chilled containers.
Time in hot weather
Perishable food should not stay outside temperature control beyond one hour above 32°C, or two hours in milder weather. Count unchilled transport, preparation and serving together, not just time after grilling.
Serve in batches and hold waiting hot food at 60°C or above. Promptly chill leftovers in small containers. A return journey will not necessarily cool a large hot pot safely inside a packed cooler.
Is melted ice enough?
Food temperature and keeping meltwater out of containers matter more than the presence of cold water. Monitor the thermometer and replace cooling supplies as needed. Later cooking cannot be relied on to resolve every risk after time and temperature control is lost.
