Thawing should keep the surface cold as the centre softens. Counters and hot water are unsuitable shortcuts. Plan fridge thawing where possible or use a safe alternative followed by immediate cooking.
Fridge thawing
Place the pack on a tray containing juices, on a lower shelf away from ready-to-eat food. Keep the fridge at 4°C or below and allow time for thickness and pack size. One steak and a frozen clump need different times.
Separate portions before freezing next time and label cut and date. Do not depend on appearance after ice accumulates to identify contents.
Cold water and microwave
For faster cold-water thawing, use a tightly sealed leakproof bag and change water every 30 minutes. Cook immediately afterward. Do not replace cold water with hot water to shorten the process.
Use microwave defrost according to the manual and cook immediately because some areas may warm or start cooking. Texture may become less uniform than fridge thawing; monitor rather than assuming an automatic setting suits every weight.
Before pan or grill
Blot excess surface moisture and ensure the centre is no longer frozen if full thawing is required. Prepare tools before bringing meat out for seasoning. Do not rinse away thawing liquid; clean packaging contact and surrounding surfaces properly.
Follow product-specific cook-from-frozen instructions where provided. They do not mean any thick frozen cut can use a programme written for thawed meat.
Can thawed steak be refrozen?
Continuous fridge thawing may allow refreezing within safe storage limits, with possible quality loss. Cold-water or microwave thawing requires cooking before refreezing. Follow the product instructions and consider any earlier poor storage.
