Safe courtyard grilling begins before lighting. Position equipment outdoors as instructed and plan clear routes for raw meat and serving dishes. Crowding around the grill or sharing one surface increases confusion during busy cooking.
Choosing the location
Use stable ground away from flammable materials and children's routes. Never burn charcoal inside a room, garage or enclosed tent; an open window is no substitute for outdoors. Check building and local requirements for the location.
Keep long tongs, heat-resistant gloves and appropriate fire-safety equipment nearby according to safety guidance. Store fuel away from heat and never add lighter fluid to an existing fire.
Three work areas
Separate raw meat, utensils and cooked food. Use a clean plate from the grill, not one holding raw juices. Wash hands after raw meat and before touching bread or salad.
Reserve clean serving sauce before marinating. Do not brush ready-to-eat food with a brush that touched raw meat. Keep bread and vegetables covered away from splashes and meat preparation.
Chilling and serving
Take out only the meat to be cooked soon. Above 32°C ambient temperature, perishable food should not remain outside temperature control over one hour; otherwise, the limit is two hours. Count preparation and serving time together.
Serve small batches and hold hot food at 60°C or above when waiting. Check meat with a thermometer and refrigerate leftovers promptly in shallow containers. Do not mix food left out too long with properly stored food.
When is grilling responsibility finished?
Only after shutdown and handling charcoal and ash according to the manual, not when the last dish is served. Keep children away during cooling: surfaces and coals can remain hot without visible flames.
