Charcoal-Grilled Kofta: Keeping It on the Skewer and Tender

Charcoal kofta needs a cold mixture and controlled moisture before strong coals. Falling from a skewer does not necessarily mean poor meat: watery onion, uneven thickness, narrow skewers or turning too early can cause it. Address these details one at a time.

The kofta mixture

Use 700 g suitable lamb or beef mince, one small grated and thoroughly drained onion, three tablespoons parsley dried after washing, one teaspoon mixed spices, salt and pepper. This makes several medium skewers; the count depends on skewer length and portion size.

Mix until evenly combined and cohesive, then chill covered. Cook a small test piece for salt and texture. If much water escapes, review onion and herbs before adding breadcrumbs that may change the recipe.

Shaping securely on skewers

Choose flat metal grilling skewers if available and dry them before shaping. Distribute meat evenly and close it around all sides. Avoid thick centres and very thin ends, which may dry or break away before the centre cooks.

Dampen your hand slightly when needed rather than adding water to the mixture whenever it sticks. Return skewers to refrigeration if grilling is delayed. Never leave mince near charcoal while waiting for the coals.

Grilling and turning

Prepare direct and gentler heat zones. Let the surface set before the first turn, then rotate gradually for even colour. Move skewers to the cooler side if fat causes flames. Aim for browning, not a blackened, burnt surface.

Check the thickest section with a suitable thermometer until it reaches 71°C. Handle hot skewers carefully and transfer kofta to a clean plate. Serve with bread, salad and sumac onions, with sauce alongside to preserve the crust.

What if the kofta keeps falling off?

Shape the remaining mixture into patties for a suitable flat grilling surface rather than losing it through the grates. Next time, reduce onion moisture, keep mince cold and test one skewer before shaping everything. This identifies the cause and helps you repeat the result.
