Warm mixture, watery onion or uneven shaping can make kebab fall. Random breadcrumbs are not the first solution and may alter flavour without fixing the cause. Assess mixture, equipment and heat separately, testing one skewer first.

Problems within the mixture

Start with known mince suited to grilling. Drain onion liquid and dry washed herbs. Add ingredients gradually instead of pouring in onion water, and keep the mixture refrigerated during preparation.

Mix until cohesive and uniform, then test a cooked piece. Unmeasured increases or reductions in fat may change grilling behaviour without solving the problem. Ask about undeclared fat content before preparing a large event batch.

Correct shaping

Use a wide skewer suited to mince and spread an even layer around it. Avoid thick centres and thin ends, sealing contact points. Lightly dampen hands if needed without repeatedly soaking the mixture.

Do not exceed the skewer's manageable length or weight. If meat slips before grilling, chill it and review texture rather than hoping fire will fix it.

Heat and turning

Use settled coals and let the surface set before the first turn. Do not pull or squeeze meat with tongs. Rotate gradually using the skewer and move to gentler heat during flare-ups.

Cook mince to 71°C. Never return meat dropped on the ground or a contaminated surface. If it separates onto a clean suitable tray, finish as fingers or patties instead of reshaping hot meat.

Can the mixture be rescued without skewers?

Yes, if safely stored. Shape patties or fingers and fully cook in a pan or tray. Changing the method is practical when a mixture does not suit hanging from a skewer.
