The best grilling meat depends on equipment, size and time. A good slow-cooking cut may stay tough over fast heat, while a small tender cut may dry under a lid for too long. Choose the method before the meat rather than relying on marinade to rescue it.

Cuts for quick grilling

For steak, seek a clearly named cut such as ribeye or striploin with even thickness. For skewers, ask which cut the cubes come from and whether they suit quick grilling. Cubes describes shape, not the muscle or its required cooking time.

Distinguish a thick outer fat layer from marbling within meat. Some fat benefits flavour, but dripping fat requires a cooler refuge during flare-ups. Tell the seller whether you want quick skewers or a large cut for gentle grilling.

Large cuts need a different plan

Covered indirect heat can cook larger cuts, with monitoring of both grill and meat temperatures. Connective-tissue-rich cuts may need longer than merely reaching a safe temperature to become tender. A small steak's timing cannot guide a whole shoulder.

If serving time is close, choose cuts identified for quick cooking or suitable ready-made burgers. Buying a large cut and raising flames to compensate usually darkens the outside before the inside is ready.

Useful ordering questions

Check whether weight is boneless or bone-in, average thickness, uniformity and existing seasoning. Request separate packs for meats needing different times. Read descriptions rather than buying a large quantity from a photograph alone.

Keep received meat chilled and prepare the grill before bringing it out. Use a thermometer: whole beef and lamb cuts need 63°C with at least three minutes' rest; mince needs 71°C. Surface colour is no substitute.

Will long marinating tenderise any cut?

No. Marinades add flavour and may alter the surface, but cannot turn every tough cut into a quick steak. Cut selection and heat method remain fundamental.
