Make a Rich, Traditional Saudi Meat Kabsa


Meat kabsa is a favourite Saudi dish for family meals and gatherings. Its flavour comes from the balance of spices, tender meat and basmati rice. Start with carefully selected fresh meat from ALRAQI MEATS.


Ingredients

1 kg lamb or camel meat

3 cups basmati rice

2 onions, chopped

2 tomatoes, chopped

2 tablespoons tomato paste

3 garlic cloves, crushed

2 carrots, grated (optional)

4 tablespoons oil or ghee

5 cups meat stock

Salt to taste


Kabsa spices

1 teaspoon cumin

1 teaspoon ground coriander

1/2 teaspoon black pepper

1/2 teaspoon turmeric

1 teaspoon paprika

1 cinnamon stick

4 cardamom pods

4 cloves

2 bay leaves

Dried black lime (loomi)


Method

1. Heat the oil in a large pot and cook the onions until golden.

2. Add the garlic, tomatoes and tomato paste, then stir until combined.

3. Add the meat and cook until lightly browned.

4. Add the spices, then pour in water or meat stock.

5. Cook until the meat is tender.

6. Rinse the rice, soak it for 20 minutes and drain.

7. Add the rice to the stock, checking that there is enough liquid.

8. Cook over medium heat until the rice absorbs the stock. Reduce the heat and continue cooking until done.

9. Serve the kabsa with the meat. Garnish with toasted nuts and raisins if desired.

Choose good-quality fresh meat.

Avoid adding so many spices that they overpower the meat.

Soak the rice to help the grains stay separate.

Let the kabsa rest for 10 minutes before serving.
