Reverse searing begins with gentler heating and finishes with surface browning. It generally suits thicker steaks and needs a thermometer to guide transition. It organises heat rather than guaranteeing identical results for every cut.
When to choose reverse searing
Use adequate thickness and suitable equipment for both stages: an oven and heavy pan, or a lidded two-zone grill. Thin steak may finish too quickly to benefit.
Dry and moderately season the surface. For an oven, place on a rack over a suitable tray. Follow a reliable recipe matching thickness and oven heat rather than applying a huge cut's schedule to two small steaks.
The gentle stage
Monitor the centre with a suitable probe, approaching the safe final target gradually. Allow for additional pan heat, but verify the actual reading after searing rather than relying on calculated expectations.
Do not pause and store half-cooked meat for another day. Prepare the pan in time for a direct transition within one continuous cooking process.
Searing and finishing
Heat a suitable surface and add a thin oil layer if needed. Brown both sides and appropriate edges under observation. Form the crust without unnecessarily extending cooking, especially near the centre-temperature target.
Whole-cut steak must reach 63°C followed by at least three minutes' rest before slicing. Do not subtract assumed carryover degrees and presume the target will be reached; measure what actually happens. Follow special instructions for processed or mechanically tenderised cuts.
Why did a strong crust not form?
The surface may be wet, pan unsuitable or overcrowded. Correct these next time instead of searing endlessly to imitate a photograph. A moderate crust and well-cooked centre are preferable to a burnt exterior.
