Steak Thickness: Why Weight Alone Cannot Determine Cooking Time

Thickness determines how far heat travels to the centre. Equal-weight steaks can differ in surface area and thickness, so identical timing is unreliable. Match approximate shape to equipment and preferred method when buying.

Thickness and direct heat

Thin steak responds quickly and may cook inside before a very dark crust develops. It needs suitable heat and close observation, not necessarily a long oven programme. Prepare sauce and vegetables beforehand for prompt serving.

Thicker steak allows staged cooking: sear then finish gently, or reverse sear using a suitable recipe. Do not keep it over maximum heat waiting for inside and outside to match; edges may burn first.

Consistent comparison

Estimate thickest-point measurement and record weight and cut. Batch similar steaks together. Tapered cuts may need several checks or positioning thin ends away from stronger heat.

Minutes per side are not a guarantee. Equipment temperature, starting meat temperature, pan material and bones affect results. Time organises work; a thermometer determines completion.

Buying and serving

Check pack count and weight, then plan portions. A large thick steak may suit sharing after slicing, while smaller cuts simplify individual service. Extra thickness is not a goal when equipment or time cannot support it.

Probe sideways into the centre. Whole cuts need 63°C plus at least three minutes' rest. Slice across the grain afterward and offer sauce separately to preserve the meat's distinct flavour.

Should steak be pounded thinner?

That changes shape and cooking method and suits some specific recipes. Buy the required thickness rather than altering a thick-steak recipe's cut randomly while keeping its original timing.
