Doneness describes preferred colour and texture, but is not itself a safety standard. Chefs' names and suggested temperatures vary. Use a food thermometer and clear official guidance, especially with differing thickness or preparation.
Doneness and safety limits
FoodSafety.gov recommends 63°C with at least three minutes' rest for whole beef and lamb steaks. Mince such as burgers and kofta needs 71°C. Whole-steak methods cannot automatically apply to minced patties simply because both are meat.
Some restaurant serving temperatures fall below that home-safety minimum and are not presented here as safety recommendations. Follow specific packaging for processed or mechanically tenderised cuts, which may differ from intact untreated muscle.
Probe placement matters more than colour guesses
Insert sideways into the thickest centre, away from bone and large fat deposits. Wait for a stable reading as instructed and check several areas in uneven steaks. A reading near the browned surface does not establish the centre temperature.
Meat type, condition, cooking and lighting affect internal colour. Pinkness or clear juices should not be the sole test. Finger pressure cannot replace an actual required measurement.
Guest preferences and service
Ask texture preferences before cooking while maintaining appropriate safe limits. Group similar steaks and monitor each batch instead of one universal time. Prepare sides and sauce for serving promptly after rest.
Finish an individual portion longer when requested. Keep cooked meat off raw-food plates and clean probe and tools between uses. If service is delayed, use controlled hot holding rather than leaving plates on the table.
Is grill temperature the same as meat temperature?
No. Air or grate temperature describes the surroundings; a probe inside meat measures the centre. Both help organise cooking, but food completion depends on measuring the food itself.
