A good marinade leaves the cut's flavour clear and supports surface browning. More lemon or vinegar does not always mean more tenderness; the surface may change before deeper tissue does. Start simply and change one element per trial.
A basic grilling marinade
For one kilogram of suitable grilling cubes, mix two tablespoons oil, one tablespoon lemon juice, two crushed garlic cloves, one teaspoon paprika, half a teaspoon cumin and pepper to taste. Salt moderately, accounting for any salty prepared sauce.
This is a home starting point, not a requirement for every cut. For steak, omit cumin and use only salt and pepper if preferred. Shawarma needs suitable strips and its own marinade; one skewer mixture need not suit every dish.
Time and chilling
Marinate covered in the fridge. For small pieces, start with a few hours according to the recipe, avoiding an untested overnight soak in strong acid. More time cannot fix an unsuitable quick-grilling cut.
Keep fresh ingredients such as onion or yoghurt refrigerated throughout marinating. Leaving the bowl on the counter does not safely speed flavour absorption. Bring out only the quantity you will grill when equipment is ready.
Before grilling
Drain excess liquid gently; large drips onto coals cause unwanted flames and smoke. Do not wash meat to remove marinade. Separate raw and cooked utensils and discard raw-contact marinade unless thoroughly boiled before another use.
Reserve clean sauce at the start for serving rather than taking liquid from the raw-meat bowl. Check the correct cooking temperature for the cut and offer extra acidity separately.
Can sugar or honey be added?
Use measured amounts if sweetness suits the recipe, preferably a thin layer near the end under observation. Sugar darkens quickly over strong direct heat.
