White Beans with Beef: A Practical Recipe Using Cooked Beans

Meaty white beans are made easier by using pre-cooked or canned, drained beans. This way you focus on the doneness of the meat and the balance of the sauce, and avoid varying cooking times for dry grains. The following recipe makes about 4 servings.

Ingredients

  • 600–750 g beef cubes.
  • 3 cups cooked and drained white beans.
  • Onion, two garlic cloves, and two tomatoes.
  • One tablespoon of tomato paste, and two tablespoons of oil.
  • Half a spoon of cumin, salt, pepper, and hot water.

Start with the meat

Brown the cubes in batches in a suitable pot. Add onions, then garlic, then tomatoes, paste and spices. Add hot water to cover the meat, and cook covered over low heat until it reaches the desired tenderness.

Add the beans at the end

If using canned beans, drain and rinse according to the pack instructions. Add when the meat is nearly cooked and simmer for about 10–15 minutes to combine with the sauce. Stir gently to keep the beans whole; vigorous boiling can break them up.

Adjust texture

For a thicker sauce, mash two tablespoons of beans in a little broth and return them to the pot. This is a method that gives a consistent texture without adding flour. If it thickens, gradually thin with hot water and adjust the salt after tasting.

What if I want dry beans?

For dried beans, follow the pack's safe preparation and cooking instructions and cook them before adding to this recipe. Soaking alone does not make them ready to eat. Do not substitute dried beans directly for cooked beans using the same timing. Serve with rice and store leftovers in suitable portions for reheating.
