Taking meat on an outdoor picnic needs a cooling plan as well as grilling equipment. A cooler alone is not enough: ice quantity, internal temperature, journey length and how often it is opened all affect whether food stays cold.
Before going out
Transfer meat directly from the refrigerator to a container with adequate ice or cooling packs, aiming for 4°C or less. Place raw food in air-tight, leak-proof containers, underneath ready-to-eat food. It is practical to have a dedicated beverage container to minimize opening the meat container.
On site
Place the cooler in shade and keep it out of a hot car. Remove only the next batch for grilling. Bring clean water and soap for handwashing if facilities are unavailable, plus separate utensils and dishes for raw and cooked food.
While grilling
Check the center temperature according to the type of meat, and do not rely on the grate marks alone. Minced products such as burgers and kebabs need proper verification. Do not put cooked meat in a plate to carry raw meat before that without cleaning it.
Time in hot weather
Perishable food should not remain outside of refrigeration or hot storage for more than two hours in general, or one hour if the weather exceeds about 32°C. If you can't keep the leftover properly cold, don't assume it's safe to return just because it's in the case.
Choose a realistic order size
A barbecue box offers variety, but calculate quantities around meal numbers and available cooling. Buying more than your cooler can hold makes safe organisation harder. Prepare a list of utensils, ice and a thermometer before buying the meat.
