Rib eye
Rib-eye comes from the rib area and is often known for marbling that gives rich flavour as it cooks. Marbling naturally varies between cuts. Watch rendering fat and smoke, adjusting the heat instead of keeping the pan at maximum throughout.
Striploin
Associated with the loin region, it usually has a relatively regular fillet shape with an outer strip of fat. It can suit those who like a clear texture and a slice that is easy to cut after cooking. That doesn't mean it's fat-free or that every bite is less fatty than every ribeye.
