The weight of meat on a kitchen scale before cooking is usually different from its weight after cooking. Part of the water and fat comes out, and bones or unused parts may be removed when serving. Understanding this difference helps you estimate quantity and compare the cost of a meal more accurately.

Specify which weight you mean

There is the declared weight of the package, the weight of the meat that entered the pot, the weight of the cooked food, and then the weight of the edible portion after the bone has been separated. Do not mix these numbers. If you weigh the entire plate with the broth and rice, you will not know the weight of the meat alone.

Why doesn't one ratio work?

A pure cut is different from a bone-in one, and dry cooking is different from cooking in a broth. The amount of fat trimming, the size of the piece, and the degree of doneness also affect it. Therefore it cannot be guaranteed that each kilo purchased will give a fixed amount after cooking.

Try calculating your recipe's yield

Weigh the specified amount before cooking after removing the packaging. After cooking, separate what you want to count, such as cooked boneless meat and broth, and then weigh it. Divide the final weight by the starting weight to get a ratio that is specific to this experiment only. Repeat observation if the type of meat, cut, or cooking method changes.

Illustrative mathematical example

If a hypothetical batch weighing 1 kg before cooking gives 650 g of the portion served, its yield is 65%. This is an illustration, not a standard meat yield or a promise for a product. Use the calculation with your own measured weights.

When you know your typical recipe's yield, you can plan for guests and reduce excess. Compare bone-in and boneless beef according to the method of use, not just the nominal price per kilo. If the product is within a weight range, base the actual weight received on the trial log, verifying that it matches what you requested.
