Pasta with minced meat is a recipe suitable for dividing into meals, and it works well with a consistent sauce that sticks to the pasta without submerging it. You can prepare the sauce first, then boil the amount of pasta you will serve in the meal.
Ingredients for about 4 servings
- 400–500 g minced beef.
- 350 g pasta, a small onion, and two garlic cloves.
- Two cups of crushed tomatoes, and a tablespoon of tomato paste.
- Two tablespoons of oil, salt, pepper and Italian herbs as desired.
Meat sauce
Sauté the onion, then add the mince and break up the lumps across the pan. Add the garlic and tomato paste, followed by tomatoes and herbs. Simmer for around 20–30 minutes, stirring and adding a little water as needed. Check that the mince is fully cooked and reaches 71°C.
Boil pasta
Follow the pasta pack's cooking time and test the texture near the end. Reserve a little cooking water before draining, then add the pasta to the sauce with two or more spoonfuls of water as needed to bring it together. Do not add all the water at once.
Serving
Serve immediately, adding cheese if desired, paying attention to the milk. Pasta varies in ingredients; Some contain eggs, so read the package if you are allergic. Cooked vegetables can be added separately without adding too much liquid.
To prepare for several meals
Store the sauce in appropriate portions after rapid and safe cooling, and heat only the required portion until it reaches the appropriate temperature for leftovers. Separating the pasta from the sauce when storing may help avoid it absorbing all the liquid. Don't leave the large pot on the cold stove for hours waiting for the next meal.
