Oven-Baked Lamb Haneeth: Covered Cooking and a Browned Finish

This home version of lamb haneeth uses covered, gentle cooking with limited browning at the end. It does not claim to reproduce every traditional haneeth method; the aim is a practical result with a suitable oven and roasting dish.

Ingredients for about 4-5 servings

  • 1.5 kg lamb meat with bones.
  • Two sliced onions, one green pepper, and 4 garlic cloves.
  • 2 tablespoons oil, ½ spoonful cumin and ½ spoonful black pepper.
  • Salt according to taste, and a cup of hot water.

Prepare the roasting dish

Preheat the oven to 165–170°C. Place onions, peppers and garlic on the bottom, and brush the meat with oil and spices. Arrange the pieces without overcrowding, and add water from the side of the tray so as not to wash away the marinade from the surface.

Covered cooking

Cover the tray tightly with an oven-safe lid, or with a method suitable for your pot. Leave it for about 2 and a half to 3 and a half hours, depending on the size of the pieces, and check the liquid and tenderness during cooking. Add a little hot water if needed; The intended moist environment does not completely submerge the meat.

Final browning

When the meat is tender and fully cooked, uncover and raise the oven to 210°C for a few minutes while watching closely. Extra browning will not fix tough meat; cover again and continue gentle cooking if needed.

Mistakes that can be avoided

Frequently opening the cover changes cooking conditions, and a wide dish loses liquid faster. Small pieces also cook differently from large ones. Use a thermometer and check tenderness, then serve with rice or bread and some cooking juices. Remember that bone-in weight is not the same as the weight of boneless meat served.
