Minced Meat: Why Storage and Cooking Need Extra Care

Minced meat requires careful monitoring of preservation and cooking, because the mincing process distributes the surface components within the mixture. Therefore, the way to deal with it is different from a whole slice, and browning the outside is not enough to judge the center.

Plan to use it soon

As general household guidance, refrigerate raw mince at 4°C or below and use or freeze within 1–2 days, following shorter or stricter pack instructions. An acceptable colour does not justify longer storage.

During preparation

Keep unused portions in the refrigerator, and prepare onions, spices, and utensils before taking them out. If you are shaping a large number of burgers or koftas, work in batches rather than leaving the entire mixture on the counter during preparation.

Complete cooking

Minced beef, veal and lamb need at least 71°C at the centre as a general minimum. Use a thermometer suitable for patties or meatballs. Colour may change before the required temperature or remain pink for other reasons, so it cannot establish safety alone.

Taste and season

Do not taste the mixture raw for salt. Cook a small test piece completely, then adjust the seasoning with a clean utensil. Pay attention to the onion water in the kofta and fillings. Excess moisture affects texture but is not a measure of quality or safety.

Choose the packaging

Compare ground beef and Naimi by flavour, weight and recipe. A 500g package may suit a specific recipe, while a larger package requires a portioning plan. Choosing the size you will use quickly makes organization easier and reduces the need for frequent handling of open packaging.
