Meat Colour and Red Juices: What Appearance Can Tell You

Meat colour can change with oxygen, packaging and lighting. The red liquid in a pack is associated with water and proteins, including myoglobin. Colour alone cannot prove freshness or spoilage, and red juices are not automatically blood.

Why is the color different?

Meat in vacuum packaging may appear darker or purplish, then change after exposure to air. Color also varies between muscles and species. These general changes do not eliminate the necessity of checking validity and storage conditions.

What do you examine with appearance?

Package integrity, instructions, storage temperature, product date, and any unusual smell or sticky texture. If worrying signs occur or transportation conditions are unsuitable, discontinue use. Don't wait for a color change to deal with a known heat problem.

Fluids and processing

Avoid contact of raw liquids with salad or bread, and clean the opening of the package. Drying the surface of the steak with clean towels may help browning, but it is neither sterilization nor a substitute for proper cooking.

Color after cooking

The doneness of a burger or anything else does not depend on color alone. The color may change before reaching a safe temperature, or part may remain pink for various reasons. Use a proper thermometer instead of guessing.

When buying steak

The image shown shows the product, but is affected by lighting and display and does not represent the percentage of fat or condition of each item. Read the description and package information, and compare type, weight and preparation. If a discrepancy appears that requires review, document it before cooking and contact the store.
