Marinating Meat Safely: Containers, Timing and Sauce

Marinating meat adds flavor, but it does not make the product outside refrigeration and shelf life rules. The appropriate container, duration, and handling of the sauce after it comes into contact with raw are the most important things used to organize this stage.

Seasoning in the refrigerator

Use a suitable covered food-safe container in the refrigerator, not on the kitchen counter. Follow the product and recipe instructions. Lemon or vinegar does not justify leaving meat in a warm kitchen for hours; acidity can change surface texture over time but does not sterilise it.

Separate the serving sauce

If you want a portion of the marinade for the final dish, reserve a clean batch before putting the raw meat in it. Do not pour contaminated marinade directly over cooked meat. The easiest homemade option is to separate the sauce, and discard the rest that you don't intend to handle in a cooking-safe manner.

The amount of liquid

The marinade is not necessarily a complete immersion. Use an amount that covers the pieces as appropriate for the recipe, turning them with a clean utensil when needed. Before frying, remove excess liquid according to the method, so that the pan does not turn into a boiling pot.

Yogurt contains milk, and some sauces contain soy, wheat or sesame. Read the cards if there are any guests who have allergies. Some products may already be seasoned, so do not double the salt before checking.

Organizing the meal

Write down the start time for marinating on a note, and prepare your cooking utensils before removing the meat. Do not extend the shelf life of a product near its expiration date simply by placing it in a marinade. Planning a specific dish, such as beef cubes for the oven, helps you choose the right quantity and time without exaggeration.
