Use a clear two-board system
Use one board for raw meat and another for ready-to-eat food, or clean thoroughly between tasks. Colours or labels can help. Include the knife, handle and surrounding surfaces in cleaning, since contamination is not limited to the board's centre.
After cutting the meat
Wash boards and utensils with suitable detergent and water, then rinse and dry according to the material instructions. Use a dishwasher only for dishwasher-safe items. Unsuitable cleaning can crack or damage some boards.
Disinfection when needed
If you use a disinfectant intended for food contact surfaces, adhere to the concentration and contact and rinse times on the packaging. Do not mix disinfectants and cleaners or add vinegar and lemon to them. The goal is to follow clear product instructions, not make random mixtures in the kitchen.
When do you replace the board?
If deep cracks or grooves appear that are difficult to clean, replacing it may be more convenient than continuing to use it. Check it periodically, especially if you are cutting large quantities or using the knife aggressively.

Prepare vegetables and bread first, then meat, and wash hands before returning to prepared foods. When preparing cubed beef for stew, place used packaging and bags away from the salad area. Pre-organization reduces the need to constantly move between clean and raw tools.
