Madghout camel meat combines meat and rice in a pressure cooker, but its success requires separating the two stages of cooking. Start with the meat alone, then add the rice with a calculated amount of liquid. This is a guide recipe for about 4 servings, and time varies depending on the size of your camel meat pieces and your machine.
Ingredients
- 1 kg mixed camel meat, and 2 cups of basmati rice.
- A large onion, two tomatoes, and two garlic cloves.
- Two tablespoons of oil, and one tablespoon of tomato paste.
- 1 teaspoon kabsa spices, 1 dried lime and 4 cardamom pods.
- Salt, black pepper, and water according to the minimum required for the pressure cooker.
Cook the meat
Sauté onion and garlic, then add the meat, tomatoes, paste and spices. Add liquid according to the appliance instructions without exceeding its fill limit. Close and select the appropriate meat setting in the manual. Some medium cuts may be checked after a 35–50 minute pressure cycle, but this does not guarantee tenderness.
Check before rice
Release the pressure in the manner indicated by the device, and do not force the lid open. Check the meat, and finish cooking if needed before adding the rice. In this recipe, we cook camel meat completely done, and 74°C in the center can be used as a conservative target and continue cooking until the desired tenderness.
Rice stage
Measure the broth rather than adding the rice to all of the liquid randomly. Use the appropriate liquid ratio and rice program for your machine and type of basmati. Be aware that rice expands and some appliances have a lower filling limit for expanding foods.
Serving
After the cycle ends and pressure is safely released, let the rice rest briefly, then fluff gently. On your first attempt, prioritise the appliance instructions over general timing. Record the liquid amount and result to refine the next batch.
