Meat-filled grape leaves need firm but not overly tight rolling. Rice expands, so tight rolls may split or stay hard inside. Tender leaves and small, even portions of filling improve consistency in a family-sized pot.
Ingredients
For four to six portions, use 500 g prepared grape leaves, 400 g mince, one cup washed, drained rice and one finely chopped small onion. Add two tablespoons oil, salt, pepper, mild spices and lemon to taste. Prepare hot stock and potato slices or spare leaves to protect the pot base.
Rinse brined leaves and taste their saltiness before salting the filling. Fresh leaves may need brief blanching depending on thickness. Tough and delicate leaves do not need identical cooking times.
Filling and rolling
Combine meat, rice, onion, spices and oil. Place a leaf on a clean surface, add a small amount near its base, fold the sides and roll gently, leaving limited expansion room. Make similar-sized rolls for easier doneness checks.
Line the pot with potatoes or spare leaves and arrange rolls moderately snugly, seam-side down. Place a heat-safe plate above to limit movement. Gently add hot stock appropriate to the recipe and pot size without forcefully displacing the contents.
Cooking and testing
Bring to a boil, then simmer gently. Cooking may take 60–90 minutes depending on leaves and roll size. Test a central roll for cooked rice and a meat-filling temperature of 71°C. Add lemon gradually according to existing saltiness and acidity.
Rest briefly before lifting carefully with a suitable spoon. Serve with yoghurt or salad and promptly store leftovers in shallow containers.
Why is the rice still hard?
Overfilling, tight rolling, insufficient liquid or too little time may be responsible. Do not increase heat sharply; add a little hot stock and simmer longer. Reduce filling next time.
