Egyptian Meat Fatta: Layering Bread, Rice and Garlic-Vinegar Sauce

Egyptian meat fatta depends on timely assembly. Bread needs some stock to soften, but loses its character if soaked too early. Rice should be cooked with separate grains before layering; cook the meat until tender, then briefly brown if desired.

Ingredients for four

Prepare 800 g meat cubes suitable for simmering, two cups washed Egyptian rice, two cut-up flatbreads, one onion for stock and three garlic cloves. For the sauce, use one and a half cups crushed tomatoes, two tablespoons vinegar, one tablespoon ghee or oil, salt and pepper. Reserve enough meat stock to cook the rice and moisten the bread.

Preparation takes about 25 minutes. Meat may need 60–120 minutes or longer, depending on the cut. This is a planning range: check tenderness rather than serving tough meat because time is up. Increase weight for bone-in meat according to its bone proportion; it is not directly equivalent to boneless meat.

Stock, sauce and rice

Cover meat and onion with water in a pot, bring to a gentle boil and skim as needed. Lower the heat and cook until tender. Strain the stock and check salt before using it for rice, since cooking concentrates it.

Toast bread in the oven with a little oil until crisp. In another pan, gently cook garlic in ghee without burning, carefully add vinegar and tomatoes, and reduce. Taste before adding more vinegar. Cook the rice using the method and stock quantity appropriate to its variety, not one fixed ratio for all rice.

Assembling for serving

Place bread on the dish and moisten with a little hot stock. Layer rice, sauce and meat above it. Reserve some toasted bread for a final contrasting texture if desired. You can briefly brown the cooked meat in a pan, taking care not to dry it.

How can fatta be prepared for a gathering?

Prepare components separately and assemble near serving time. If cooked ahead, cool meat, stock and rice promptly, refrigerate, then reheat to 74°C. Do not leave a large pot of rice cooling on the counter for hours.
