Levantine Meat Sfeeha: A Light Topping and an Evenly Browned Base

Good sfeeha balances dough thickness and topping quantity. Tomatoes and onions piled centrally wet the base before it browns. This home version makes small open pies for serving with yoghurt and vegetables or alongside grills, controlling moisture throughout.

Ingredients

For 10–12 pieces, use 300 g flour, one teaspoon instant yeast, one teaspoon sugar, half a teaspoon salt and two tablespoons oil. Gradually add about 180 ml lukewarm water; flour absorption varies.

For topping, prepare 400 g mince, one small onion and one tomato, both chopped and drained, one tablespoon parsley, one teaspoon pomegranate molasses, salt, pepper and spices. It should spread without liquid pooling beneath it.

Dough and topping

Knead into a soft, cohesive dough and cover until noticeably risen. Prepare topping and refrigerate while waiting. Cook a small sample to test salt; never taste raw meat.

Divide dough evenly and roll moderately thin rounds. Spread a thin meat layer nearly to the edges, leaving a small border. For smaller starters, reduce both dough and topping rather than piling thick meat onto a narrow base.

Baking and troubleshooting

Preheat to 220°C and use a suitable tray. Start checking after about 12 minutes, finishing according to size and oven. Confirm the mince reaches 71°C with a fine probe even if edges brown early.

If the top is ready but the base soft, move the tray lower and monitor. Drain vegetables more and reduce topping thickness in the next batch. Do not sprinkle raw flour on meat to absorb moisture; correct the cause.

Storing leftovers

Cool promptly without stacking, then refrigerate in a container. Reheat to 74°C, covering lightly initially if bread has dried. The recipe contains wheat; check topping ingredients for allergies.
