Cooking Striploin: An Even Crust and Easy-to-Serve Slices

Striploin's relatively regular shape helps, but thickness matters more than generic recipe timing. Watch side fat and meat centre, choosing direct cooking or a gentler finish. Begin with a dry surface and well-heated equipment.

Pan cooking

Dry and moderately season meat, preheat a suitable pan and lightly oil if needed. Cook without crowding and watch colour on both sides. Stronger heat alone cannot compensate for a wet surface.

Watch thin steaks closely; they may finish before developing a thick crust. Prepare gentler finishing for thick steaks. A schedule for another thickness is not a fixed standard.

The fat strip

Brown the edge using tongs to hold the steak carefully. Do not squeeze or repeatedly pierce it. If excessive fat or smoke develops, lower heat and check oil, pan and ventilation suitability.

Side fat does not imply equivalent marbling throughout the muscle. Longer cooking will not automatically increase juiciness. Monitor the centre and end intense heat once the crust is sufficiently coloured.

Slicing and serving

Measure sideways into thick meat away from fat. For a whole cut, confirm 63°C followed by at least three minutes' rest. Transfer to a clean plate, identify grain and slice across it with a sharp knife.

Serve light herb sauce or butter separately with vegetables or salad. For sandwiches, use manageable strip lengths and avoid soaking bread with both juices and sauce.

Can striploin be used for shawarma?

It can be thinly sliced for a suitable recipe, but is not the only choice and may affect cost. Ask for a quick-browning cut suitable for strips rather than relying only on the steak name.
