Meat for the shell
A fine, uniform grind helps meat combine with bulgur. Coarse pieces or tough membranes can show through and weaken the shell. Ask whether the product suits kibbeh and whether a finer grind is available; mince alone does not specify fineness.
Many recipes use relatively leaner meat for the shell than the filling, but ratios vary. Do not infer a percentage from colour or photographs; request declared information when necessary. Seasoned burger or kofta mince may contain additions affecting kibbeh texture and flavour.
Different needs for the filling
Cook and crumble filling with onions and spices, then cool before enclosing. It should have clear meat flavour without releasing excessive liquid. Evaporate moisture properly rather than adding unnecessary breadcrumbs.
Choose beef or lamb to taste and test a cooked piece before shaping everything. Include pine nuts or other nuts in the filling volume and leave room to seal. Extra filling is no advantage if kibbeh opens during frying.

- How fine is the grind, and does it suit a kibbeh shell?

- What is the pack weight, and how will it be divided between shell and filling?
A recipe using 400 g for the shell and 300 g for filling needs 700 g meat before bulgur and onions. Keep it cold during preparation and work in batches if the processor heats the mixture.
Can raw kibbeh meat be tasted to check salt?
