Lebanese-Style Rice with Minced Meat: Separate Grains and Balanced Flavour

Rice with mince makes a simple main or a base for other cooked meats. Brown the mince first and match liquid to the rice. Extra spices or stock do not necessarily enrich the dish; they may mask meat flavour or affect grain texture.

Ingredients

For four portions, use 400 g beef or lamb mince, two cups long-grain rice, one small chopped onion and two tablespoons oil or ghee. Add half a teaspoon mixed spices, pinches of cinnamon and pepper, salt adjusted to stock, and optional toasted nuts for serving.

Wash rice and soak if its instructions require, then drain well. Liquid quantity depends on variety, soaking and pot; there is no universal ratio. Keep extra hot stock available if needed during cooking.

Building flavour

Soften onion in fat, add mince and break it up. Let moisture evaporate and ensure safe cooking before adding rice. Briefly stir in spices until fragrant without burning.

Gently combine drained rice with the meat, then add hot stock. Taste before covering: salt should be moderate, since the finished dish generally needs no salty sauce.

Cooking and resting

Once boiling, lower heat and cover according to the rice method. Avoid repeated stirring, which breaks grains and releases starch. When cooked, turn off heat and rest covered for about ten minutes, then fluff gently with a fork.

Add nuts at the end to preserve crunch, keeping them separate when guests avoid them. Serve salad or yoghurt alongside. If adding other meat, calculate the total rather than treating mince as a garnish excluded from the portion.

What if rice is hard after the liquid has gone?

Add a little hot stock around the edges, cover and finish gently. Avoid vigorous stirring or adding a whole cup at once. If cooked rice is wet, carefully allow some moisture to evaporate before resting.
