Best Meat for Kofta: Grind and Moisture Matter More Than Extra Ingredients

The best kofta meat depends on whether you use skewers, a tray or sauce. Charcoal kofta needs enough structure for turning, while tray-baked kofta can be softer. Start with suitable cold mince, then control onion and herb moisture before considering eggs or breadcrumbs.

Choosing mince for kofta

Use beef mince for a mild flavour, lamb for a stronger character, or a measured blend to taste. No single ratio suits every kofta method. Ask about grind, added ingredients and declared fat percentage rather than relying on a photograph.

For a first trial, combine 500 g plain mince with one small grated, drained onion, two tablespoons dry chopped parsley, half a teaspoon mixed spices, salt and pepper. Add onion gradually: size and water content vary, so one onion per half-kilogram is not always a precise rule.

A small test before adjusting the whole batch

Mix until ingredients are distributed and the mince holds together, stopping once the texture is right. Cook a small piece and taste when fully cooked. If it crumbles, check onion moisture, meat temperature and piece size before adding lots of binders.

Tough kofta may result from heavy pressing, overcooking or a blend too lean for the method. Randomly adding water may replace toughness with crumbling. Change one factor at a time so you know what helped.

Kofta is more than a burger with parsley

A simple burger highlights meat flavour and crust; kofta distributes onions, herbs and spices through the patty or finger. Mixing and shaping therefore differ. Likewise, mince cannot replace shawarma strips when you want sliced-meat texture: each recipe needs its own preparation.

For skewers, keep thickness even and seal the ends. On a tray, leave gaps for steam and avoid widely varying sizes. Cook minced meat to 71°C at the centre; a browned top is insufficient.

Does good kofta always need breadcrumbs?

No. Breadcrumbs belong in some recipes and absorb moisture, but change texture. Start with a balanced mixture and add them when the recipe calls for them, considering wheat allergies.
