Smash Burgers or Thick Burgers: Which Suits Your Dinner?

The main difference between smash and thick burgers is contact with the cooking surface and meat thickness, not the sauce. A smash burger has a broad browned crust, while a thick patty gives the meat's texture a stronger presence. Your choice determines the tools, portion weight and arrangement of the other ingredients.

When should you choose each style?

Choose smash burgers if you have a griddle or heavy pan, a wide metal spatula, and enjoy browned edges and thin layers. Choose thick patties if you prefer fewer layers and can monitor the centre with a food thermometer. Open grill grates are unsuitable for pressing meat balls as you would on a flat surface.

For a homemade smash burger, start with two small balls per sandwich, for example 70 g each. For a thick burger, about 150 g is a possible starting point. These are portioning examples. Keep total meat weight reasonably similar when comparing styles, or you will mainly be comparing meal sizes.

Smash-burger steps that make a difference

Heat the surface, add a cold meat ball and press immediately, once, using suitable baking paper as a barrier. Remove the paper, season and let a crust form before lifting. Use a flat spatula edge to lift the crust with the meat rather than leaving it behind. Do not keep squeezing after cooking has begun.

For a thick patty, shape it evenly and make a shallow central indentation if needed to reduce bulging. After browning, lower the heat if the outside colours before the centre cooks. Insert the thermometer from the side into the middle, especially when measuring from above is difficult.

Assembling the sandwich

A smash burger works with cheese, pickles and a light sauce, but loses its crispness if drenched. A thick patty needs a bun that holds juices without overwhelming the meat. Toast the cut sides, prepare vegetables before cooking, and assemble just before serving.

Can ready-made patties be pressed into smash burgers?

Not necessarily. Some are designed with a specific thickness and seasoning. Pressing them late may break them or squeeze out juices. Use a product suitable for smashing or portionable mince, and follow the packaging instructions.
