Sticking does not always call for more oil. The grate may be cold or dirty, meat wet, or turning too early for a firm crust. Review those factors first, then adjust oil if needed.
Start with the grate
Preheat according to the manual and clean appropriately for its material. Inspect for bristles and debris. Use only cleaners suitable for food-contact surfaces and rinse or wipe as instructed.
A light coating of suitable oil may help, but never pour oil onto flames. Brush meat instead of spraying large amounts onto the grill. Extra oil increases smoke and fire risk without guaranteeing release.
Dry surfaces and reduce crowding
Drain liquid marinade and gently blot excess moisture. Water delays browning and may encourage tearing when lifting. Do not wash meat before grilling; handle packaging and surfaces with clean tools.
Leave room to insert tools and turn without tearing adjacent pieces. Use two batches on a small grill. Adding too much food lowers surface temperature even after good preheating.
Turning with the right tool
Let the crust set, then gently test a small edge. Use tongs for steak or a wide spatula for burgers rather than repeatedly piercing with a fork. If it resists, review heat and wait briefly instead of pulling hard.
Soft kebab may be easier on a flat surface or suitable mesh than widely spaced bars. Changing equipment is a practical way to preserve shape and allow full cooking.
Must meat be turned only once?
No single rule suits every cut and recipe. Maintain a firm surface, appropriate heat and thermometer checks. Do not let a fixed turning count cause burning or delay cooking the centre.
