Meat starters add variety, but a main-sized portion of each quickly raises quantities. Count pieces and bites, then total meat before shopping. Kibbeh, arayes and hummus contain different proportions of bulgur, bread and chickpeas, so meat weight per portion differs.
Choosing starters
Choose three contrasting forms: kibbeh, a small arayes piece and a spoonful of hummus with meat. Add vegetables or salad and avoid making everything fried or heavily sauced. If shawarma is the main, reduce meat starters to perhaps one type.
For six guests, two small kibbeh each means 12 pieces; a quarter arayes loaf each means one and a half loaves total. These planning examples need adjustment for piece size and whether a main follows.
Turning pieces into shopping quantities
Use a specific recipe and record its meat yield. If 650 g of meat across shell and filling makes 20 kibbeh, each averages 32.5 g raw meat before cooking. Do not use the whole piece's weight as meat weight in your shopping total.
Divide mince among recipes before seasoning. Kibbeh needs bulgur and a different grind, arayes a thin low-moisture filling, and hummus dry browned mince. One seasoning for the whole batch limits flexibility.
Serving timing
Prepare and chill hummus early, cooking its meat topping near service. Bake arayes in batches and avoid enclosing them hot. Serve kibbeh after draining and letting the shell settle instead of piling it into a deep dish.
Use small replaceable sauce bowls with chilled reserves. Provide separate utensils for each dish to prevent transfer of allergens or raw meat juices to ready-to-eat food.
Can leftovers be used the next day?
Yes, if promptly and correctly stored, reheating cooked components to 74°C. Crispness may change; arayes and kibbeh will not necessarily return to exactly their original texture. Good portion planning works better.
