Meat for Levantine Cooking: Choosing Mince, Cubes or Strips

No single meat form suits every Levantine dish. Kibbeh needs a particular mince texture, stew benefits from cubes that tolerate time, and shawarma needs strips from a quick-cooking cut. Decide the dish before the cut to reduce improvised adjustments.

Meat for stuffed vegetables and kibbeh

Stuffed vegetables and sfeeha need mince that spreads without excess water; kibbeh shells may need a finer grind than their filling. Ask about fineness, meat type and declared fat content rather than judging by colour.

If a recipe needs lean meat, request it explicitly instead of buying an unknown mixture and trying to remove fat later. Test a cooked sample for salt and structure before adding bulgur or bread to the entire batch.

Pot cubes and pan strips

For okra, freekeh and stock dishes, choose cuts identified as suitable for gentle cooking. Bone-in meat can add flavour and presentation, but account for bones: a kilogram does not yield the same meat as a kilogram of boneless cubes.

For shawarma, ask the cut's name before requesting thin slices. Thinly slicing tough meat does not guarantee tenderness in minutes. Cut across the grain, dry the surface and cook in batches for browning rather than boiling in pooled liquid.

List dishes and quantities, then total each form. Separate mince into kibbeh and sfeeha packs and cubes into a freekeh pack, for example. Keep different seasonings separate; kebab seasoning need not suit every dish.

Allocate measured strips for shawarma rather than deducting them from filling mince. Request labelled packs for easy use and maintain chilling during transport and preparation.

Is lamb always better than beef?

It depends on desired flavour, cut and cooking method. Both minces suit many recipes, while fat content and grind texture may influence results more than the animal's general name.
