Oven-baked burgers suit days when you want several sandwiches without constant attention at the pan. They offer consistent batches and easy temperature checks, although less browning than griddle smash burgers. Dry the surface, space patties apart and briefly brown at the end if necessary.

Ingredients for oven-baked burgers

For four sandwiches, divide 600 g plain mince into four patties, or use ready-made patties according to the packaging. Have buns, optional cheese, pickles, lettuce, and salt and pepper for unseasoned meat. Use a rimmed tray so rendered fat cannot drip onto the oven floor.

Preheat to 200°C as a practical starting point. Oven strength and fan settings vary, so monitor browning and adjust. Space patties apart to prevent liquid pooling. An oven-safe rack over the tray can keep them out of the rendered fat.

Cooking and checking

Shape evenly thick patties without excessive pressure and place in the hot oven. Start checking medium-sized patties after about 12 minutes; this is an approximate checkpoint, not a guaranteed cooking time. Turn if needed for even colour, and cook the centre to 71°C.

If the centre is cooked but the outside is pale, use the overhead grill briefly while watching continuously. Keep unsuitable baking paper away from the element. Add cheese at the end and toast buns separately so they do not absorb tray fat.

Three avoidable mistakes

Very thin patties dry quickly, crowded trays create a wetter environment, and over-kneading makes the texture unnecessarily firm. If unfamiliar with the oven, start small and record patty weight, thickness and time to reach the required temperature.

Avoid tightly covering cooked patties for long if you want a browned surface: trapped steam softens it. Prepare buns and vegetables beforehand for prompt assembly.

Does using an oven remove the need for a thermometer?

No. A 200°C setting describes oven air, not the centre of the meat. Oven burgers need internal temperature checks just like pan-cooked or grilled burgers, especially when thickness varies.
